Back 40 Fries: The Harvest Hero Your Kitchen Needs

Southern Alberta might be nearing the end of harvest, but in central and northern parts of the province, most of the crops are still standing tall in the fields. Whether you're deep in the thick of it or finally seeing the light at the end of the grain cart, one thing is true across the board—everyone’s tired. Especially the farmers... and definitely their cooks.
After weeks (maybe months) of long days, dusty boots, and the same ol’ sandwiches packed before sunrise, it’s time to give your crew something different. Something warm. Something cheesy. Something that feels like a reward at the end of a long day (or a morale boost in the middle of a tough one).
Enter: Back 40 Fries
This dish is the definition of comfort food with a purpose. It’s hearty enough to feed a crew, quick enough for a weeknight, and best of all—it uses ingredients you probably already have in your pantry or freezer.
We start with a simple, satisfying chili made with ground beef, canned goods, a couple fresh veggies, and a trusty pack or two of Club House Chili seasoning. Let it simmer while the fries crisp up in the oven, then pile it all together with a generous handful of Tex Mex cheese. Or two. We don’t judge.
It’s a perfect way to shake off the sandwich fatigue and give your crew something to get genuinely excited about when they walk through the door.
So if you’ve got a freezer full of fries, a pantry full of beans, and a kitchen full of people who are done with the usual—this one’s for you.
Because when the harvest is almost done, dinner should be too.
