A cozy farm-style twist on a classic calzone

As we wait (somewhat patiently) for harvest to begin, there's a quiet hum in the air — part anticipation, part preparation. Meals around here are about to shift from lingering summer evenings to quick bites between combines and grain trucks. That’s exactly why we love simple, hearty recipes like this one.

This week’s Sandwich Series feature is made for that in-between season and also great as a handheld in a truck, combine, or grain cart — introducing: Prairie Pockets.

These rustic calzones are simple to make, endlessly customizable, and perfect for busy weeknights or feeding hungry farm crews. Made with store-bought pizza dough mix and everyday toppings, it’s a no-fuss recipe with big, satisfying flavour.

What You’ll Need:

  • 1 package of dry pizza dough mix (prepared as directed)

  • 1 cup pizza sauce

  • 1 ½ cups shredded mozzarella cheese

  • Toppings of your choice (we love pepperoni, cooked sausage, sautéed mushrooms, onions, and bell peppers)

  • Olive oil (for brushing the tops)

  • Italian seasoning or shredded cheese (for garnish)

How to Make Them:

  1. Prep the DoughMix your dough according to package directions. (Pro tip: add a pinch of garlic powder for extra flavour!)

  2. Build the PocketRoll dough into circles. On one half, spread pizza sauce (try stirring in some Italian herbs), layer on your toppings and a generous handful of cheese.

  3. Seal and SeasonFold over the other half, pinch the edges closed, and place on a parchment-lined baking sheet. Brush with olive oil and sprinkle with Italian herbs or more cheese.

  4. Bake & EnjoyBake at 400°F (200°C) for 18–22 minutes or until golden brown. Let cool for a few minutes before serving with extra sauce for dipping!
